Well moist, soft and amazingly cute and delicious, these coffee shaped chocolate cookies are definitely must try if you enjoy the combination of chocolate and coffee into a dessert. Ideal for every occasion especially served in the morning with a nice cup of cappuccino, these cookies will be a total hit in the year ahead! Here is the recipe:
Ingredients:
For the cookies:
- 250 grams sugar
- 1 cup water
- 125 grams butter
- 80 grams crushed nuts of your choice (walnuts or hazelnuts)
- 120 grams crushed biscuits
- 100 grams dark chocolate (50-60% cocoa)
- 1 to 2 teaspoons instant coffee
For the filling:
- 100 grams dark chocolate (50-60% cocoa)
- 3 teaspoons vegetable or sunflower oil
Instructions:
- In a blender or food processor, blend the nuts. Transfer to a dish and set aside.
- Next, apply the biscuits into the blender/food processor and process for 10 seconds. Set aside.
- In a small saucepan, pour the water and sugar and bring to boil. Allow the mixture to boil for 3 minutes.
- Then, remove the saucepan from the heat and add the butter, stir until it melts. Once well melted, immediately apply the chocolate, processed nuts and biscuits, and coffee. Whisk for 2-3 minutes until well incorporated.
- Then, allow the mixture to chill. Once the mixture is chilled, create small balls with a coffee shape using your hand; use a toothpick or blunt knife to press each cookie in the middle to get a shape of a grain cafe.
- When you are finished, prepare the filling. In a microwave, melt the dark chocolate together with the oil in a microwavable safe bowl, in 30 sec. intervals until smooth and melted. Dip very briefly each cookie into the melted chocolate and arrange them on a flat dish. Refrigerate for 15 minutes to set.
- Serve with a nice cup of coffee.
