Chocolate Cake with Mint Buttercream Frosting

Chocolate cake is always a great idea! This chocolate cake with mint buttercream frosting is so easy and quick to prepare, and what is even more important – really delicious! If you like the refreshing zest of mint coordinated with chocolate. It will take you around 15 minutes to prepare it plus 25 minutes to cook.

Chocolate Cake with Mint Buttercream Frosting
Ingredients:

For the chocolate cake:

  • 230 grams (1 cup) butter, at room temperature
  • 1 ¼ cups (250 grams) sugar
  • 1 teaspoon mint extract
  • 4 eggs
  • 1 ¾ cups (215 grams) all-purpose flour
  • 2 teaspoons baking powder
  • ¼ cup (25 grams) unsweetened cocoa powder

For the mint buttercream frosting:

  • 225 grams (1 cup/2 sticks) unsalted butter, at room temperature
  • 1 package (8-ounce/225 grams) cream cheese, such as Philadelphia, cool from the fridge
  • 1 teaspoon vanilla extract
  • 2 teaspoons mint extract (not peppermint)
  • 550 grams (4 ½ cups) confectioner’s sugar
  • Green food coloring

Instructions:

For the chocolate cake:

  • Heat the oven to 350°F/180°C/Gas Mark 4. Grease and flour two 9 inch pans. Set aside.
  • In a mixing bowl, using an electric mixer, beat sugar and butter until light and fluffy, about 3 minutes.
  • Apply the eggs (one at the time) and mint extract, stirring well after each addition.
  • Then, in a separate bowl, combine the flour, baking powder, and cocoa powder together. Apply them to the wet ingredients mixture. Beat to incorporate.
  • Divide the batter between the prepared baking pans; bake for around 25 minutes or until a tester comes out clean. Allow cooling for 5 minutes into the pans then transfer them to wire racks in order to cool completely. While cooling, prepare the frosting.

For the mint buttercream frosting:

  • In a large bowl, on medium speed, beat the butter until creamy. Apply cream cheese and extracts; whisk until completely incorporated.
  • Apply a few drops of green food coloring and beat until well combined. Increase mixer speed to high and continue mixing until light and fluffy.
  • Gradually put confectioners’ sugar, mixing on low speed, until well incorporated. Apply additional green food coloring in order to get the desired color. Mix on high speed until well incorporated and smooth, around 2 minutes.
  • To assemble, place one cake layer on a plate or cake stand, pipe or spread ½ of the frosting over the cake layer and sandwich with the other cake layer.
  • To finish, pipe or spread the remaining mint frosting, slice and serve.
