This chocolate pound cake with chocolate ganache is so rich and moist with a great chocolate flavor. It goes ideally with a cup of coffee, tea, ice tea, or milk. Chocolate for energy – simply perfect for breakfast! Here is the recipe:
Ingredients:
For the cake:
- 1 cup flour
- 3/4 cup cocoa
- 2 oz. chocolate, chopped
- 1 cup butter, softened
- 1/3 cup boiling water
- 5 eggs
- 1 1/4 cup sugar
- A pinch of salt
For the chocolate ganache:
- 3 oz. chocolate, chopped
- 1/2 cup heavy cream
Instructions:
To make the chocolate pound cake:
- Preheat the oven to 325°F/ 160°C/Gas Mark 3. Grease and line a 9×5 in. loaf pan.
- In a bowl, place the flour and combine with a pinch of salt; set aside.
- Melt the chocolate (double-boiler or microwave) until melted and smooth. Set aside and add the cocoa; stir until well incorporated and allow to cool for 2-3 minutes.
- Meantime, using an electric mixer, on a low-speed, mix the sugar and butter until fluffy. Then, add the chocolate and cocoa mix and whisk on medium-high until well combined. Next, add the eggs, one at a time, and whisk well after each addition. Slowly add the flour mixture and combine well.
- Finally, transfer the batter to the prepared pan and tap it a little but on the work surface in order to eliminate air bubbles.
- Place in the oven and bake for 6o to 70 minutes, or until a tester inserted in the middle of the pound cake comes out clean (do not overdo it, it will get dry).
- Remove and allow to cool a few minutes in the pan, then turn it out of the pan and let it cool completely.
- In the meantime, prepare the chocolate ganache.
To make the chocolate ganache:
- Melt the chocolate (double-boiler or microwave) and beat in the heavy cream, stir until you get a nice, silky mixture. Spread over the pound cake. Slice and serve.
