Poached Pears in Red Wine


Pears are a popular fruit in Tuscan cooking and are frequently served as part of a salad, often with walnuts and cheese. Here they are poached in red wine until tender. This pere al vino rosso or poached pears in red wine are so unique and delicious! A perfect autumn dessert! Here is the recipe:

Poached Pears in Red Wine
Servings 4

Ingredients:

  • 4 firm dessert pears, such as Comice
  • 55 grams/2 oz. caster sugar
  • 2 cinnamon sticks
  • 125 ml/4 fl oz. red wine
  • 125 ml/4 fl oz. soured cream, to serve

 

Instructions:

  • Carefully peel the pears. Cut a slice from the base of each pear and discard, then remove and discard the core from each base, using a pointed knife. Put the prepared pears in a saucepan, add enough water to just cover, then add the sugar and cinnamon sticks.
  • Slowly bring to the boil over a low heat, stirring until the sugar has dissolved. Cover and simmer gently until the pears are tender. This will take from 20-40 minutes, depending on their firmness. Remove from the heat.
  • Remove the pears with a slotted spoon and transfer to a serving dish. Remove the cinnamon sticks. Return the pan to the heat and leave the liquid to bubble for 2-3 minutes, or until thick. Stir in the red wine and pour over the pears.
  • Serve warm or cover and leave to chill in the refrigerator before serving with soured cream.
